Autumn-like Morning

It was an autumn-like morning at 46 degrees. The house was chilly and we were in the mood for something warm and autumny. So we got out the old cookbook.

My mom has a lot of church cookbooks and my sister and I have a few. But there is only one of the cookbooks that has a special name. We call it the old cookbook. In it is some of the yummiest recipes that have become family favorites.

The recipe we made this morning is my mom's recipe that is in the old cookbook: Oven Pancakes.

We added chopped golden delicious apples and pecans and drizzled it all over with pure, organic maple syrup. Delicious!


Oven Pancake

2 eggs, beaten
½ cup milk (or Rice Dream)
½ cup flour

¼ stick butter
Nutmeg (fresh ground is especially delicious and aromatic!)

Melt butter in glass pan. Pour in batter. Sprinkle with nutmeg. Bake at 450° for 15 minutes. Serves 2.

I love Autumn. The smells, tastes, feel....just about everything. It was nice to have a taste of Autumn this morning.

Yummy! I think this will be a great lunch idea when I don't have anything else on hand.
