Yesterday on the way home from the cities, after picking up my nephew and niece, I listened to excited chatter and squeals of laughter in the back of the van. They spent the rest of the day all over the house in bedrooms, in the fort (the blanketed table kind), out shoveling the drive way and generally wearing themselves out. Funny that they could manage to stay up so late to avoid the much needed rest!
In the morning - much later than usual at our home - the sleepy, happy faces emerged ready for another day of cousins. We started our morning with some Quick Sweet Rolls, raw monterey jack cheese and grapefruit slices. Yum!
The last time I made the rolls Joshua wanted icing. So this time we added a light glaze of powdered sugar, milk and orange essential oil. (If adding essential oils to food make sure it has a supplement fact label on it.)
Mix:
2 1/4 c. white flour (We use some whole wheat pastry flour as well.)
1 T. baking powder
1/2 t. salt
Fluff together with pastry blender.
Then cut in:
1/2 c. shortening
Pour:
1 c. milk (or rice milk or - my favorite: 1/2 cup plain kefir with 1/2 cup water)
1/2 c. shortening
Pour:
1 c. milk (or rice milk or - my favorite: 1/2 cup plain kefir with 1/2 cup water)
over mixture. With hands or rubber spatula, gently mix until it holds together as a dough.
Roll out to a rectangle on a floured surface. Spread with softened butter. Sprinkle with Sucanat and cinnamon.
Gently roll the dough up into a log. Cut every 1/2 inch (with plain floss works great and the kids seem to think it is the coolest thing they've ever seen.) and place on an ungreased baking sheet.
Bake for 10 minutes in a 450 degree oven.
Enjoy with or without a glaze.
